The sign hanging around the left hand pig's neck says that it came 3rd in the 'Christmas fat stock competition tuesday 13th december 1903'. Note that the meat displayed includes huge sides of beef and oxtails at the sides, with pigs (with their fat covered kidneys hanging down) and shoulders and legs of lamb at the top.
